What Is Neotame?
Neotame is a new-generation, zero-calorie, high-intensity sweetener: a white crystalline powder that is approximately 8,000 times sweeter than sucrose (7,000–13,000 times across concentrations) and 30–60 times sweeter than aspartame. Chemically it is N-[N-(3,3-Dimethylbutyl)-L-α-aspartyl]-L-phenylalanine 1-methyl ester, a next-generation dipeptide derivative of aspartame. Among high-potency sweeteners, Neotame is regarded as the closest in taste to real sucrose, with a clean, pure sweetness and no lingering metallic or bitter aftertaste.
The sweetness-to-concentration curve of Neotame follows the same predictive model as other high-intensity sweeteners. At a typical use level of 10 ppm in water, Neotame delivers a sweet intensity equivalent to roughly 7.87% sucrose, and its sweetness response scales predictably as concentration rises from 2 ppm to 40 ppm. Sensory testing across 2–40 ppm confirms that Neotame produces a pure sweet taste with no metallic or chemical off-notes — only the sweetness intensity increases with dosage, while bitter, sour and metallic attributes remain flat and minimal.
Compared to sucrose, Neotame has a slightly slower onset of sweetness, but its overall time-intensity release profile closely tracks aspartame — as shown below against 8% sugar and 560 ppm aspartame.

SHELF LIFE AND STORAGE | Neotame is stable for at least five years at ambient and dry storage conditions, typically 15°C to 30°C (59° F to 86° F) and 35% to 60% relative humidity, in a well-closed container.
